Mexico in the fall brings a warm cornmeal beverage, almost like porridge, called Atole to the table. Pumpkin Atole is especially delicious. This simple grain and dairy free ?drink takes it inspiration from Pumpkin Atole without the corn meal.
Hot Pumpkin drink inspired by Atole
1 cup of pumpkin puree
1 cup almond milk
1/4 tsp cinnamon
scant 1 tbsp maple syrup
dash sea salt
Warm in a small pot. serves 4 small mugs.
